Let's see...here's what comes to mind offhand:
Ace wo Nerae - 70's shoujo tennis apocolypse. Freakin' awesome, in a very retro, sports anime sort of way.
Beck - Japanese indie rock a go-go. The pace is a bit laid back and the Engrish is amusing, but it certianly rocks.
Gokusen live-action - Okay, so this isn't anime per se, but it's based on manga and it's a helluva lot better than the Gokusen anime. Yakuza high school teacher thug life, with a particularly cute main character. I mean, she's damn cute. Seriously cute. Oh, yes.
Keroro Gunso aka Sgt. Frog - Inept, frog-like aliens have come to invade Earth and wind up living with an off-beat family. Cue wacky hijinx and a ton of Gundam references. Great fun.
Legend of the Galactic Heroes aka Boring Gay Germans In Space - Well, not quite. Extremely epic military science fiction. Long, complicated, and very, very good.
Maria-sama ga Miteru - A rather laid-back series about the student council of a Catholic girl's school, with mild lesbian overtones. Very love-it-or-hate-it.
Monster - Extrordinarily good drama about a Japanese brain surgeon working in Germany who finds himself tracking down a serial killer. 40+ episodes and still going strong; it's a commitment, but is still very highly recommended.
My HiME - Superpowered teenagers alternate between battling for the fate of the planet and having wacky adventures. Quite fun, actually, with a good budget and plenty of action.
Touch - Terribly mellow high school drama about a love-triangle and baseball. A bit slow but extremely involving once you get into it. It's also extremely 80s, but that's part of it's charm.
Twin Spica - Very, very laid back show about a girl's dream to become an astronaut and the lion-headed ghost that keeps her company. Okay, it's more than a bit slow, but the SF is solid and it makes for pleasant, if not exhilirating, viewing. It's no Planetes, but, really, what is?
Yakitate!! Japan - Our earnest young hero is determined to discover and popularize a uniquely Japanese form of bread. Cue frantic baking action, compete with bizzare humor and baking competitions. This is super entertaining, but be sure you've got a big pile of croissants to much on while you're watching it.
Yawara - Our heroine just wants to be an ordinary teenage girl. Meanwhile, her father wants her to follow in his footsteps as world champion in Judo. Guess who's getting their way? Yawara fucking rules.
