I like Touchwiz on my SGS5 more than stock Android on my Nexus 7. I agree with the OP's sentiment about Touchwiz making it faster to get to commonly used settings like brightness control. This is improved somewhat in the Lollipop preview, but it's still faster in Touchwiz.
The main complaint I have about Samsung's software is all of the pre-installed extra programs like S Voice, the Samsung media store, etc.
It still takes 2 actions to get to the brightness slider and toggles in Lollipop (swipe then tap). In Touchwiz, it's only 1 action (swipe).
I also have to say that I'm not a fan of the new window management in L. Maybe it will grow on me eventually, but for now, I find it takes me longer to locate the window I'm looking for than it did in the old interface. This is one area where I used to prefer stock over Touchwiz, but Touchwiz may be better than what is in L.
But that's just the thing, why do you need a 2 finger swipe gesture to see your battery %? What if you're using the phone with one hand? It then becomes a 2 step process. But I must say I'm biased though, my phone history: sgs1 with stock, gnex stock, nexus 4 stock, n7, n7 2013 stock.
That is not a problem caused by bloat, it's a difference in the defaults between the Touchwiz launcher and the stock launcher.
If you prefer faster transitions, just go to Developer Options and reduce the transition time. Or install a different launcher.

I think you might be confused as Google Now is nothing like Nova launcher.
But if you're not, I don't understand why you'd uninstall Google Now. The deep integration is the best thing about Android.

It's not bizarre. The reasoning is subjective. Most stock fans shove the reason why stock is superior down people's throats when in the end, chances are they don't really give a shit. Android updates are not
as important as they used to be. I could be using Android Jelly Bean right now and miss a few things, but overall I would be using a 100% fine phone. Would it be nice to have them? Of course. I mean I'd love to have Lollipop on my G3 day one, but if I was using a N5 or whatever, I'd be missing on some things I love on my G3.

I have a question about my S3...
Several weeks ago my phone updated and the Touchwiz UI seemed to be replaced with something else (among other changes, Google Now is fixed as the left-most home screen) . Overall I like it more, but what is it? Is Touchwiz gone? Is it closer to stock Android? Is it just a newer version of Touchwiz? I'm on Android 4.4.2 which I don't think has been updated in months.
Because Google services aren't poorly designed, useless, or in the way...
