Because as it stands, even the Super Mario Line-up work exactly the same as the Smash counterparts. Gold paint it is.

They'll have different poses, but you can only save data from one game on an amiibo at a time. Nintendo really wants you to have a smash Mario, a Mario party Mario, etc.
I think this is more a limitation of the NFC storage than anything. You can only put so much data on something that doesn't have a battery holding a charge.
Skylanders and DI have the benefit of only working with one game, so they can store something more abstracted and smaller that the game knows will be there. With the Amiibos it seems you can store whatever you want, hence the one-game's data limitation.
What if they sold power discs that attached to the bottom, so the same amiibo could have multiple saves?

You just gave Nintendo the wonderful idea of packaging all 719 regular Pokemon amiibo, all 28 Unown amiibo and all 48 mega evolution Pokemon amiibo (all with shiny and alternate-coloring variants - yeah, Basculin, Vivillon and others, I'm talking about you) in sealed boxes so that you won't know what you're getting when you buy them at retail or online until you open the box.
