Just beat the 2nd boss, Father... this fight is rough but if you

move the entire fight onto the stairs

it makes it sooooooooo much easier:

The hardest part about this fight is dodging his attacks while maintain visuals and not getting blocked by gravestones. If you traverse up/down the stairs you can easily see him at all times, dash out of his attacks, wait for him to exhaust his combo and land a R2. I'd hit him at the top of the stairs, middle, and then go back top.

Once I moved the fight to the stairs I beat it on my 2nd try.

It'll most likely attack you with its right hand when you're standing close to it. Usually its a regular attack that can be easily parried. Or just wait for it to finish a combo then throw a molotov cocktail at its face. Either way will allow you to riposte.

I think it just takes a try or two to get used to it.

Get up close early on, and side dodge while occasionally attacking. Stay mobile, but close. Eventually, he will get stunned and you can nail him for a lot of damage. Do that twice, and you're good! Don't be afraid to spam heals if you absolutely have to, though. I feel like they're very frequent, and anything you pick up that you can't carry goes to storage

On the first phase, get yourself between him and the row of graves near the entrance to the fight. keep him on the other side, and just slash, and move back when he goes in for a big attack (he will still hit you occasionally). If he comes over on your side, go on his. Rinse and repeat until stage 2, where you pretty much MUST parry his attack twice. Should do it. I still haven't beaten this guy because I keep missing the parry, but we can do it man! Keep trying
