How much VIT do you have? I would've insta died one some of the combos he hit you with (like the uppercut, or the left right punches). It made the fight hellish.

The way I ended up beating that guy was just stun locking him to death. Run away when endurance is low, come back repeat.

You have to take a break. Coming back later and seeing what there is you have missed is pretty great but don't overexert yourself, you could have a lot of things to do after beating it once but a small break is necessary for your sanity or you might go a little loopy.

My stats in NG+ just killed CB. Still not sure if I want to keep going, the fact that there's no new items, and items don't scale (Bloodstone Shards, Coldblood Dew etc.) I find really annoying.

Parrying destroys him. I'd just stand right up in his face wait for his swipe and shoot him in the face. He'll sometimes do that leap attack and I'd just dodge that.

Are you supposed to be able to beat the enemies in the unseen village? Just beat the 5th boss and these guys are handing me my ass in one hit

These enemies are roided out and continuously respawn because of that bell woman. If you kill the bell woman in the vicinity that prevents their spawns and makes them "normal" in terms of stats. Problem is that in some locations the woman is in a very hard to reach place and you usually can't see/find her unless you take an alternate path. It's better to skip most of the mobs and just pick up the items.

I'm supposed to drop down through this massive cylinder-like room, but I get like 3/4ths of the way down and just cannot figure out how to drop further without killing myself. Does anyone know what I'm talking about? Can anyone help out here?

Walk to the very end right corner of the plank facing towards the center of the room. Simply walk off and you'll land on another plank.

I took an elevator from a room at the Cathedral Ward lantern and then to a tower with a bunch of sniper guys. Going down from inside the tower is a bunch of wooden planks that you have to platform through. I keep missing this jump to reach a platform that has a door.

agreed. i took some time to learn how to parry the mobs heading to cleric beast. Even those werewolves, axe dude, and hammer bros go down SHOCKINGLY fast once you get the hang of it

just curious, what weapon are you using?

I'll mainly go to NG+ for another ending, for pvp and npcs.

Using Tonitrus+10 and Ludwigs+9, have an Uncanny Saw Cleaver at +7, trying to get that to +9. For guns I'm using Cannon+8, and Hunter Pistol +8.

You just needed that confidence booster. New players who have never played a souls games get pretty freaked out when reading the comments and panic. You did great! Now, you are learning the moves and can apply them towards the next boss.

ProTip: Even a seasoned Souls player will panic during a boss fight if things don't go right, lol. I do it every time I get one low on health. I get greedy and go for an extra swing or something and that's all she wrote. I then stand up and scream "What was I doing!?!" and try again.
