It would make sense to optimize the code to maximize the resulting speed increase in order to make the demo as impressive as possible. It was a behind closed doors loading speed demo to show off the hardware's load speed, not a direct comparison of the user's daily experience of playing a PS4 game on PS5 via backwards compatibility.
