Just picked up FM2013 and I have not played this in more than a decade.

So I just started a new Career. How many leagues should I start with? My PC is graded 5-stars but picking just England, Spain, Germany, Italy and France drops the game speed to 3-stars.

I think you can make them read only and that speeds it up. Means you can't manage in that league but still see all the players and stuff.
