Using third party controllers and USB devices on PS3. Hell, with a generic usb dongle, I can use my iPhone headset!
I took the plate off to use magic swap though :/ it was only then that i realized you could do this

Streaming music from the computer in another room while playing 360 games. I loved how it smartly replaced the in game music but the sound effects were kept intact. Also custom soundtracks on the original Xbox while cruising around in GTA.

Oh man, Saturn's CD player was awesome. It's the coolest interface to any music player that ever existed imo. Also the sound quality on saturn was amazing too.

I've never used the PS3's printer function but it always seems weird and funny so I would have to go with that just because of the idea.

SNES, GC, and N64 had the same AV output. Same with the Playstations. Could reuse cables

I really like how the DS/Lite would play a special startup jingle on your birthday. It was a tiny thing, but it was nice.
Holding Z on the GCN to play a different startup tune (and holding it on all four controllers for another) was also pretty neat!

Well, custom soundtracks at least. Hopefully you'll still be able to stream from a computer or directly from your iPod like you can on 360. Also, hopefully they'll add support for streaming music services like Pandora or Spotify.

I'm not sure if this qualifies as a console feature but when sonic and knuckles came out and I could plug in sonic 3 on top of it... It was awesome.

Yeah, certain games such as Ridge Racer allowed it. I think it's because the race would be loaded into the RAM, while the music would still be steamed from the CD.
In the original Animal Crossing on GameCube, the entire game could be played without the disc.

Sega Saturn's pitch changer. I used to throw in stuff like Doggystyle and either put it on Barry White mode or Chipmunk mode.
I used to do that with early PS1 games too. I would throw in All Eyez On Me Disc 2 when I played Loaded, and it would almost always played Track 1, "U Can't C Me" while I went around blowing out brains with giant laser streams as a giant baby. OG custom soundtrack. As long as I put the game back in before exiting the level, it would load in just fine.
