Hey ph33nix, I know you do music for a living.
Any suggestions on the best way for an adult to learn guitar that has never had any structured music instruction?
Would you suggest tableture or actual sheet music?
This is an instance where I'm asking the question for ME and not a "FRIEND".
Do you have the money to take actual lessons? If so, I would highly recommend that---if you haven't really had too much music instruction in the past (I'm assuming you know a bit), some of the stuff can be an asshole learning by yourself, especially the physical set-up of playing a musical instruments. Teachers will set a structure and realistic goals for you to meet every week and you can feel your progression better, and you'll know what your next goal is too. I've got no experience with guitar but I've found with musical instruments that you can teach yourself gradually how to play songs/make whatever sounds you want, but a good teacher will show you how to do those at a high level. There's nothing like somebody really watching you in person, cause sometimes the littlest things can make huge improvements and those can be very difficult to detect and change on our own.
I've had some friends that casually play guitar and I think they picked it up themselves, not sure how though and they all played piano/string instrument. What kind of music do you want to play? Because I play violin and I cannot read tabs/Jazz chords/etc. for the fuck of my life cause I was taught straight classical so when I see that it's really not natural for me.
If you don't have experience with music theory, I'd recommend sheet music first to get yourself going, and while you do that you can figure out tabs and the harmonies/theory behind it. That's what I'd do. Hope this helps!

sucked at it cause I had no clue how to accompany a fiddler and I didn't have that natural "southern" sound
Here, this place might help. I think they're based in San Diego but they're nationwide. I used to teach for them in the DFW area, but I quit after my contract was up because the pay sucks (30 dollars an hour or something horrible like that), and I didn't want to be binded by another contract.
