If this set before the first Alien movie, why doesn't everything look infinitely more high tech?
Then again, I guess you could say the same of Prometheus.
They explained it that the nostromo was a mining/hauling/industrial ship. Not some state of the art little cruiser.

Nostromo was a low tech mining ship, probably a really old one too, while the Prometheus and Covenant are much more high tech ships, that's the best answer there is for it really, probably best not to over think it.

The Nostromo was only a towing ship (the one they use to land on LV-426). The large structure it was carrying was the refinery and wasn't at all a part of the ship. Also, they specifically said in Aliens that it (assuming both Nostromo and the refinery) were "rather-expensive".
It's better to accept that it doesn't make a lick of sense. He could have toned it down on Prometheus, but hey, it would be hard to accept today that in that future setting they wouldn't have touch-screens. But then he puts some hologram communication in there and it's obvious he gives no fucks. It is what it is. Each movie is a representation of the time it was made and how we perceived the future. Better to accept than come with this cheap ass justification.

Was about to say this. It makes no fucking sense at all, there's no continuity with the tech or even the look of what we saw in Prometheus. Ridley does not give a shit.

Because Alien was made in 1979 and conceptions of future aesthetics were different then.
