personally i consider animal cruelty to be one step too far for "religious freedom". you can believe whatever you want to believe imo, so far as you don't use that to justify harm to another living thing. imo this is a pan-human morality that applies to both religious and atheist members of society.
i don't know anything about santeria. i do know there is some animal sacrifice that is practiced to this day in various places around the world. in East Europe a wedding may involve dead chickens. some Hassidic practitioners incorporate live animals into celebrations, but i think the Hebrew faith in general shuns actual sacrifice. this is why we have kosher, a strict ruleset in place to minimize the animal's suffering. it is not holy to kill. even more so to brag about it.
has santeria much to do with Abrahamaic magic/demonology? because even in that case, demon invocation never involves killing animals in the ritual. it is entirely dependent on the corporeal hierarchy, of which you are stepping into by summoning, and holiness, purity, and mindfulness combined with a true faith is the only way a sorcerer can hope to control his demon. for a closeness to God is the one thing he holds over them. the purpose of the implements (magical sword, incense, circle, talismans, etc) is to project the magical words of the names of God by broadcasting them in Hebrew, language of the angels themselves, the way you would buff in Final Fantasy to amplify your magic. the waste left over from a magical operation (sands, ashes, whatever, in Azalea's case the rotted carcasses and entrails) is thought to be charged with a powerful and dangerous energy and must be carefully disposed. she seems to be not taking this very seriously if her magical space is such a shithole. imo she trolling.

Your equating a character in a video game (fictional in intent), with a mythological entity that has a long association to Judeo-Christian cultural narratives. I know the point you are trying to make, but there is a lot of additional weight there that isn't true of Sephiroth.
So yes you could, but why would you want to. And for them, why do you need the name? If you don't believe in the being - then really you can use any name you want.
