Can't you do that from iTunes? Right click, convert to mp3.

I don't think so, but I'll have another look. My iTunes looked different to Jed's in the video. He had a lot more options in his right click box.

I just flew through mine until I had to pick my last track. I knew what the ending track was going to be but I had to pick a suitable one for the second last track. I tried to keep the tunes fairly short and upbeat too, track 4 aside. It almost feels incongruous, but it's placed right between two really happy tracks so I think it works.
