Definitely go with the PC if your rig can handle the graphics, if it can't then go with the PS2. I hear the Splinter Cell games absolutely suck on the GCN.
For controls and graphics I recommended the PC version. PC you can get SMS 3.0, better frame etc. Splinter Cell games control better with mouse and keyboard IMO.

I've been wanting to get into the Splinter Cell and Hitman series. I played the first SC on the GameCube, but never touched any of the other games yet. My platform choices are PC, PS2, and GC. Which version(s) would you guys recommend? Keep in mind, multiplayer isn't really a big deal for me in regard to the older titles; I'm much more interested in the single player aspects.
If your PC has enough torque, I'd buy the PC versions of Hitman and SC. I own the Xbox version of Contracts and it's OK- nothing special. Hitman 2 (PC) was effing awesome though. SC on the Xbox looks good and controls VERY good. Of course it looks better on the PC though.

Imo, SC has plenty of style. But it's in the environments and not the story, and not the character designs.... and I hesitate to say, not the gameplay.
Gamers should know that once again the levels have been reworked from the Xbox version to accommodate the PS2 hardware. The larger environments have been broken down into more claustrophobic hallways and small rooms. This affects the game in two ways: on the positive side, the game still sports eye-popping visuals when compared to other PS2 games. But infortunately the smaller environments offer fewer alternate pathways and light sources that dramatically cut down on the strategy and replay value of the game.
Their regular reviews are kinda weird too... gee, let's have the guy who called Ys 1 and 2 some of the "most boring games of all time" review Ys 6 And it got the lowest score at that site than anywhere else from what I recall.
