How exactly do you have the emulators boot straight into the game? I see custom icons for Super Mario World, Smash Bros, etc, but I always thought you had to boot them through the emulator first.

For classic emulators
Make sure you associate said file extension to open with the emulator, then add the file to steam. Because steam only seems to accept .exe or bat files you have to add .exe to whatever you are trying to run. After it is added remove .exe from the file and .exe from the steam link and you can launch directly.
For Mame you have to make a bat file.

mame64.exe "NAMEOFZIPFILE"
(or whatever mame version you are using) I use mame64 because it works with steam overlay.
Save as a bat file.
While this does work I don't like working with .bat files because the overlay does not work. I just enter the command line options under the shortcut to the game in Steam. Right now I'm trying to figure out a good way for epsxe and project64 to work with the overlay.
It's 460x215. Anything with the same aspect ratio works before resizing.I am a fool of a Took. For higher quality images, what do you start with before you scale down to 400x215?

What about .sfc files (for ZSNES)? I tried changing the .sfc to .exe in the file name, but Steam won't take it.
Strange, it should still work. Are you changing the file to an actual exe file or just changing the name to .exe?
If it really is a problem, just add any program to steam and then change the target/Start in link
I'm just changing the name. I don't know how to actually change the file to an actual exe, but I'll do whatever is needed to make this work.
But even if it does work, I'll still have to close the game through the emulator, which means a keyboard/mouse, right? Is there a method to close the game automatically with a button press (ideally, a combination of a button+Home button, as Steam does with screenshots)?
Start>Control Panel>Appearance>Folder Options>Uncheck hide files extensions.
