Eh. I wouldn't be interested anymore. Playing cooperatively with friends is the main draw, or I could just go and play the old X games I haven't touched before. And don't plan to, as I have zero interest in an endless offline space game...
Developed as an offline game would've certainly freed lots resources to be invested in fleshing out features. But I don't see the trainwreck they call game design being fixed by the game being offline. When the best you can do for bounty hunting activity is create instanced areas where wanted ships you're free to blow up spawn indefinitely and even insist on alterRiNG between sets that are worht a damn and those worth shit, I don't see what offline would fix. Other than making mods possible, that are build by more competent game designers.
One thing I'll give you though, if it was an offline game, long range journeys might benefit of some form of timelapse or autopilot. That might fix the pretentious "space is big, have some more loading screens" or "go in a straight line for half an hour" bullshit they insist on preserving in the game.
