I really don't get the idea why some think because of the amount of hoops FFXV went through to finally get to a playable state the same thing is going to happen to FF7:Remake with countless delays and whatnot. Or because FF7's Steam release was delayed until Winter.
Did you know that Square-Enix didn't even port the original PC release to Steam and it's various additions, that was entirely DotEmu porting work. I doubt Square is stressing over porting the Steam release to the PS4, they probably aren't even handling and letting another porting studio like DotEmu handle it again.
For one thing there was three major things that effected Versus from the outset, and Nomura directing isn't one of them, and 4th reason which is regard to FF7 itself.
1) The biggest one was needing to divert almost most of the staff away from the game to fix the disaster that was FF14, as well as additional staff on FFXIII-2 (They even NEEDED outsource to tri-Ace because that's how understaffed they were), Less people on a project means, that much things getting done.
2) Then you need to factor the console generation shift scrapping the old console version that was on a completely architecture (PS3 and it's Cell derivative on PowerPC) to the newer console gen (PS4 and x86) on top of a complete engine shift abandoning the Crystal Tools to Luminous. I doubt what we see in the Duscae demo could have been on on the PS3 anyways without some consideration concessions made.
3) Versus was canned in 2012 and repurposed into FFXV. In fact most of the staff that were working on Versus are not even part of FFXV, It cannot be considered the same game anymore at the time when Tabata took over in 2012.

4) Unlike FFXV, FFVII:R is a remake of an already existing game. So things like creating an entirely new plot outline, or characters and their background stories, the world setting and it's locations, etc. This stuff has already been established in the original so, they just have to expand and improve on whats already there, instead of having to create all entirely new ones like for FFXV. Creating an entirely new game with nothing established is different than remake which has an existing universe and lore to work from.

I doubt FF7-R will have to deal with the project being scrapped for one console generation in place for another along or being shifted to an entirely new engine, and 95% of the staff being shifted / moved to fix some other project to slow it down. Those were the problems that plagued Versus' conversion into FFXV. I don't think any of these things are factors for FFVII:R
