Been surfing about light novels and there are so many "guy isekais into a girl body" stories
Do females actually want to read a 'female protagonist' story where the female protagonist is actually mentally a dude, or is this stuff aimed at males?

I trust you've already read TSF Monogatari and Dulce Report, which are classics, as well as their ongoing sequels.
For starters, I'd suggest Trans Venus. It has good art and while somewhat silly it's pretty vanilla in content. Another one is Conveni-N, which is pure brainless fun.
There's also Turned into a Breast Milk Fountain by a Beautiful Vampire, which is more of a light novel, and is a pretty good read, even if the erotic elements are rather tame. If light novels are fine with you, TS Revolver and Chijoku An tend to write quite a bunch of these. My Yandere older sister M-to-F'ed me! is probably my favorite.
Moving on to more extreme contents, TS-ko to Orc-san is pretty neat, and features everyone's beloved Good Guy Orc. If you can handle incest, there's some pretty nice series, such as: Para Furi ~Strange those who cohabit~, Hentai Futago, Copipe! and Change-De!.
Now talking about more specific authors, Marneko tends to do quite an amount of them, with more recently Maiden Carnation, though I do hope she'll continue Asa Onna na Ore to Futanarikko Ojou-sama one day (tan gender bender!). Ruen Rouga is another prolific author in the matter, though most of her works aside from Soul Chain are pretty tame in content (and get stuck in translation limbo). Finally, everyone's beloved Q also publishes a fair amount of one-shots unrelated to Dulce Report, but with some reoccurring themes (that is, futanaris, gender bender, and futanaris), namely Flesh Doll Studio, Extracurricular Torture [Lesson] and Girl's First Time.
Wish Ryo's Natsuduka series got fully translated though.

Shishunki Bitter Change is pretty interesting. It's about two students who switched bodies when they were kids. Instead of going to a wacky comedy it deals with the consequences of inhabiting a body that doesn't belong to them.
For gender-bender try Nyotai Ka. If you like it then you can try the author's H works later. Highly recommended.

I think the reason why Soma works and why we can often deal with shitty arcs and still keep coming back is that it takes the piss out of itself so often that you can't help but like how earnestly it goes "This is really dumb" and then just is really dumb.
Like her whole speech about beating him no matter what and then he fucking picks Udon out at random and everyone's reaction is just like "Are you fucking serious?" and she feels embarrassed now cause she said all that shit earnestly. That was hilarious.
I mean, the biggest reason is that all of the characters are good and likable and them doing almost anything can be entertaining.
