I’ll try to keep it a short hit list:
I feel the same. I will mirror your key points. I had my fun but the game has issues. At least as a MH veteran.
-Story bad. When I say it's MH's Metroid Other M I am not kidding. Replace Arkveld with "The Baby" and "Authorization" and the similarity is uncanny. Only time I really got interested was Gore.
-Sidequests are either in optional quests or out in the field...so they are all over the place. In the field you have to wait for them to show up like it's a MMO time limited event.
-Jumping off cliffs should just be instant like in Rise and not be limited by a prompt just because it wants to railroad the Seikret.
-Weapons like Hammer and Charge Blade(Axe) are so streamlined there is generally only one way to play with the weapon and with Focus mode any skill expression is lacking.
-If you cut a tail it has to be with a bladed weapon and the only way you can tell is if a monster reacts to it or if you see it flying...whereas other games the Monster gets knocked down, audibly is distressed and had a large amount of hitstop to accompany it. Furthermore you can get Tail parts from wounds so...
-Rise has a bigger aerial focus and the only weapon I feel that's reliable in mounting in Wilds is Insect Glaive and probably only 3 times a fight. Priority is open as many wounds and then choose one to knock it down as opposed to MH4 and Rise where the purpose is to knock it down for a burst damage phase.
-I only like a couple sets myself and I think half are recycled.
-Music is very forgettable. Recurring themes like Gore is also a messy arrangement leaving the original as superior. Without the percussion and wailing wind instruments the impact just isn't the same. Like DD2 the music score just feels very hollow. Lacks heart.
-I don't like the UI compared to older MH games where it's more simplistic and used to look like hieroglyphs. Now there is a whole lot going on and it really just seems too robotic and high tech.
-Game is too easy. Many attacks are very forgiving, never really punished, outside of maybe Gore you don't really run out of Stamina and blocking blocks most attacks with little impunity. Going from Wilds to World or Rise/GU/4U is a complete difference.
Monsters don't strike fear into you when you are more dangerous then they are. Probably gonna stick with Rise for the foreseeable future.
