I don't uppercut. Wait for the attack startup and teleport (he can't stop the attack once the animation has started), do a quick combo, then do one jump away. By the time you land, he should be turning around, so you can prepare for the startup of the next attack. Rinse and repeat. I had this figured out about four matches in and beat him in the fifth.
