Yeah, there's no reason you should feel limited by FL Studio in that way, but, if you don't feel happy with it you should definitely try other stuff.
If you're willing to walk on the wilder side away from the more traditional DAWs mentioned above (Cubase, Logic, Sonar, Reaper, Ableton), you could try toying with Trackers. Renoise, Buzz, Skale, http://www.madtracker.org/, or Psycle.
Be forewarned, Trackers are a huge shift in design from the traditional sequencers/DAWs you may be used to and you're *definitely* gonna want to thumb through manuals/wikis a bit.
