Not likely... she was just trying to lift a part of the lid, like with that spoon trick above ; she's twisting it but not pushing with the sharp edge. If there was a risk it would be for the knife to break and send shards all around, but with such a thick metal knife it's not even likely.
Btw I've learnt that just tapping several times on the sides of the lid is usually enough to let some air in and open the jar. It's less effort than the spoon/knife twist. But then there's nothing as satisfying as just brute forcing it.
