Oh, I see we were discussing creature design earlier in this thread!
Having just replayed RER1 (third playthrough, this time on PS3), several designs stand out in my mind:

The Malacoda parasites in the whale carcass: Whether you're fighting it on the shipdeck or with a turret/grenade launcher/rocket launcher in the chopper, it's a sight to behold. Key visuals: The whale carcass propped up at one end of the capsized cruiser, and the sinewy worms slithering out between folds of flesh, coming at you with fang-filled mouths and clicking pincers.

Scarmiglione: One of the coolest BOWs ever. Its silhouette evokes the hooded head of a knights templar, while its one arm resembles a lance and the other a shield. Great texture reminiscent of sharkskin, eerie eyeless face, and a great gimmick where it transforms in different ways depending on whether you destroy its upper torso or lower torso, the BOW alternating between blocking one or the other.

Sea Creepers: Oddly beautiful design, with the skull-like mouth, and a visage concealed by the swept-back "hair" reminiscent of a horseshoe crab's shell. I like how its ribcage is a working mouth. The idea of a creature that seizes you with its six limbs and tries to drown you is terrifying. I also find their siren-like cry to be very unsettling.

Wall Blisters: A new addition in the Unveiled Edition. These things are awesome. Apparently formed from virus-enhanced barnacles, according to in-game lore. They grow in cocoon-like sacs on the walls and ceilings — a great bit of foreshadowing — and emerge at the most inopportune moments. They go down quick, but you better not be caught reloading in close-quarters, or they'll close the gap in mere seconds and OHKO (in brutal fashion, I might add — grasping the player with two snake-like limbs, and snapping their spine). Thankfully, they announce themselves with a bloodcurdling howl. They also explode afterwards (although it appears harmless).
Once I unlock everything I want in Raid (which has been thoroughly remixed for the Unveiled Edition — nice!), I'm thinking about revisiting Revelations 2. I guess I'll talk about one of my favorite creatures there:
The Revenant: Probably the scariest BOW in modern-day RE. The Revenants are erratic-moving contortionists, with double-joined arms and legs, and hidden weakpoints. They move in a variety of ways, even walking on all fours like something out of The Exorcist. They're brilliant body horror, with multiple faces and limbs held together by nails. Their introduction in the cabin is a classic moment, and they continue to inspire dread throughout the entire campaign.
I love their shambling approach in this cutscene.
