A few of them are, but most of them really aren't. Regular Brawl is unequivocally the better, more fun game IMO, and Project M's horrible stage selection and modifications demonstrate exactly why. But hey, different strokes for different folks. Opinions are great and all that. Glad you enjoy Project M! I don't.
As stated above, simply wiping all the stage mods does nothing to address the character changes, which I find mostly awful. Project M utterly ruins Kirby and Zelda (not Sheik), my two Brawl mains, and nerfs them back to almost-Melee levels. But look, I wasn't trying to start an argument; I simply asked a question and it was answered, both by some genuinely helpful people and by some not-so-helpful people thinking that telling me Project M's changes are awesome will magically make me change my mind and believe it.
Anyway, sounds like I need to try Brawl+ Gold and Balanced Brawl.
You could just remove the Motion.pac files to revert the movesets. Most of the time, it won't freeze or anything.
The only stage that won't change even when wiped is Castle Siege as it's implemented within the code that the second stage transition will always be skipped.
I respect that you have a preference for Zelda and Kirby, but I have to disagree. Zelda gets nothing but buffs in her Project M moveset by making her faster, giving her lightning kicks bigger hitboxes, and she's given more gimmicks with a new Din's Fire.
Zelda is buffed like crazy.
Kirby on the other hand gains two benefits, easier "wall of pain" and better air game due to the fact that the dash attack gives you momentum off stage. Brawl's Kirby was good, but the new Kirby benefits from the changes and is by far much better than bottom tier Melee status.
Some people prefer Brawl and others prefer PM/Melee, I just happen to prefer the latter and they really did make the cast better with the exception of Ness and G&W. The rest of the cast doesn't suffer from being bad in Melee and Project M really makes every character viable.
The only other character that was nerfed from Brawl was Ice Climbers. The mix between Melee and Brawl Ice Climbers made the character progressively worse and IC should have returned to Melee status alongside Fox, Falco, and Marth.
These are just my opinions, but your solutions would be to remove Project M files or go make a custom build as most of the other mods are incomplete with little or even dropped support.
There's a GCT code for Melee physics but you can't really put Brawl movesets into Melee physics, it doesn't work. That's why movesets had to be changed, even at the very slightest.
There's also a GCT code for no tripping, but going off the Melee speed, you're not going to benefit from a change in physics or speed so long as the lag and clunkiness from the Brawl moveset persists.
Someone mention Brawl+/- or BBrawl, but unlike PM, those are incomplete/dropped support in favor of Project M.
