Trying to decide what sort of character to make in Skyrim. (360)

I really hate the progression/creation system in Skyrim.
Skills without perks are USELESS. If One-handed skill would increase damage by 1% every skill point, having 100 One Handed would make you competent fighter. Current 0.5%... well, not much point in raising the skill without perks. And One Handed (and Two Handed i think) are among the best skills without perks, great many others are completly fucked without perks.
Lack of speed attribute (stamina and sprinting are no substitutes, i cannot strafe-sprint) makes weak but fast characters impossible to make, limiting possible play-styles a lot.
I'd like to play either combat-stealth mix or a pure mage or stealth-mage mix.
The mage is out of question due to Skyrims incredibly boring and limited magic. I cannot make my own spells... Dual-casting is only useful for Illusion (increases max level affected) and Destruction with Impact perk as others do not benefit from it really (double duration is hardly useful) and dual-casting gives only 10% bonus (for each spell, ie total 20%) at 40% more magicka (80% for since you cast two spells). Very efficient. I thought magic in Oblivion sucked due to Spell Effectiveness and skill requirements to buy some spells but that system is great compared to Skyrim's (And Morrowind's is even better).
The nightblade is out of question since the game lacks the spells i need for the playstyle and/or requiring so many perks invested in Illusion i'm not going to bother. Command, chameleon do not exist and some genius moved paralysis to Alteration. Calm spells are fine but require way too many perks to be affordable and effective at higher levels.
There are no disintegrate nor damage etc over time effects.
I suppose a mage who sneaks around could work (ie still uses other schools normally as well) but as i said, the magic is so boring in this game...
And combat-stealth mix. Back to perks being the true skill. I need One-Handed (assasination, weak enemies), Block (bash and disarm), Archery (dragons, harder enemies), Sneak (assassination, all perks, duh), Pickpocket (i'd be a thief as well). I can get every one i need, just about (i make assumption 51 (ie 50 perks) is the maximum i get as i do not use other skills really).
But to make this truly effective and more interesting and closer to my vision of the character (roleplaying), i also need Speech's trading perks (not haggling though) and Alchemy (almost every one), for poisons.
I suppose i could throw Enchanting and Smithing to mix as i'd like to make some weapons and jewelry and maybe even armor (though i mostly play without armor).
Not only i cannot get every perk i need, i need very high level to gain most of the important ones.
Playing with "scaled-back" character is possible (barely) but i need many skills so that i won't get bored. I have played up to level 20 with sword'n'board warrior but since i focused purely on 3 skills (One Handed, Block and Light Armor) i got bored.
If i take a few perks only from every tree, i get so sub-optimal character there is no point playing.
I suppose i have to get a new computer and double dib Skyrim so that i can mod the game to be like i'd like it to be. Hell, the current system doesn't need much to be fine, just make pure-skill to be more useful in general and perks being just extra.
Now to wonder how much i can scale back my idea but still being fun and varied. Alchemy can be thrown away as i hate picking flowers but i'm going to miss poisons. I could get rid of pickpocketing but being a mere burglar...
And before you ask, no, i cannot make two characters with each focusing on different things. I have tried that but i really want to play somewhat jack-of-all-trades character. Until the game gets better magic system, more spells and spellmaking.
What is the best way to raise enchantment?
Enchant iron daggers with Banish with petty soul gems. Or if you don't care about money, enchant iron daggers with any effect with petty soul gems.
