I would agree on Homer Badman. I think there's a gut busting joke packed into every 15 seconds.
A little cliche but I'd have to go with either Last Exit to Springfield or Cape Feare. Just my personal favs.

"Bart of Darkness". It's not the funniest episode ever, but it has a great balance of humor, pacing, and atmosphere, on top of having one of my favorite musical scores in the series. It's one of the earliest episodes I remember watching as a kid too, and totally plucks a summer-time nostalgia nerve every time I watch it.
