The first thing you want to do is lead him to one of the blue sap things, as usual. This is not that difficult, as he's not very dangerous in the beginning of the battle. Blow the sap up and damage him, and as he's standing there in shock from the blast, immediately run right up to him and start punching him. Just keep pressing Square while standing right next to him facing him. As long as you're right up in his face like that he won't even once fire his shotgun or throw a grenade. This is the key to easily beating him. Also, as he'll always be trying to follow you, he won't move away from the spot where he got hurt by the sap blast (as long as you don't). Every once in a while he'll grab you and you'll have to do a short QTE sequence (just pressing Square a bunch of times to make him let go of you). Once he releases you, run up to him again and continue the beating. You'll take a bit of damage from the QTE, but not enough to kill you, and your health will quickly regenerate.
Keep doing this until you see the sap grow back in the same spot. Once it does, just shoot it to hurt him again (you might want to move back just a bit, so the blast doesn't kill you too). Then, just repeat this procedure (punching him in the face, blowing up the sap) until he's dead. You really can't fail as long as you don't accidentally go far enough away from him for him to shoot you.
Cheating? Not really, as you're not breaking any of the game's rules. Exploiting flaws in his AI routine? Sure.

Wouldnt surprise me if the number one reason the player numbers online have dropped online so quickly is because of this factor. I know its the reason myself and most of my mates stopped playing, and when we do rarely play we resort to grinding co op missions to level up because you simply dont earn enough money from normal games.
Naughty Dog really failed in this aspect of the online game design, they should have saved the ridiculous $$$ leveling requirement for roman numeral prestige ranks or whatever they are if they still exist because I only remember seeing them in the beta.
Another substantial problem is having seperate playlists for "all modes competitive" and "all modes ranked" all this does is cut the available players you search for in half making it take substantially longer to find games. All playlists should have the ranked number as it doesnt really effect anything and helps to create more balanced match ups.
I dont know whats going on behing the scenes but stupid decisons like this really need to get fixed ASAP before the player numbers get any smaller.
Even a game that most of GAF like to bash whenever they get the chance Metal Gear Online still has substantially more people playing online because it has avoided issues like these.

I would f'ing love a 1 player gold rush mode, its just way too easy with 3 people. unlike you, I play the online for the mayhem and fun. Its quite enjoyable. The jumping gunning, sneaking etc al are all amazingly fun. I do think they need to up the "horde mode" and have an endless one. That'd give gamers more oppourtunity to capitalise. I keep clearing level 10. so I want more.
