I agree with your post. Diddy Kong Racing blew me away back then. A racing game with adventure and battle elements coupled with a few boss "battles". Diddy Kong Racing is the Kart racing game for me, followed directly by Mario kart Double Dash.

A bit of both, really. I think it's pretty much agreed that the physics were a bit too slippery in comparison to the real stuff, but what they did at the time was some kind of wizardry. Papyrus was so ahead of its time that iRacing engine was built over their old engine.Almost 2 decades later, I'm wondering how the sim aspect of this game holds up.
It's difficult, sure, but was that based in reality? I can't imagine those late-90s CPUs being able to do the kind of detailed calculations for 20-something cars next to the other game logic that modern CPUs could handle. Or did they manage some sort of programming wizardry?
I mean you have Forza Horizon 3, Burnout and Mario Kart in your list, I wouldn't be criticizing anyone if I were you rofl. Driveclub is better than over half your list.
Anyway the only answer is Wipeout HD.

Endless time trialling potential once you learn all its hidden techniques. GX had much better graphics but its techniques sucked balls compared to X.
