GTA IV had much more interesting and impactful car crashes, as well as shootout outcomes that felt devastating.
Of course, GTA VI doesn’t need to replicate GTA IV’s physics 1:1, but it should use them as a foundation to create a game that feels impactful, especially in the two things you do 90% of the time: shooting and driving. Take the shooting mechanics from Max Payne 3 and the driving physics from GTA IV, and build something with real weight. GTA V failed in that regard and ended up feeling cheap.
If I remember correctly, they adjusted the physics and driving mechanics of GTA V because the engine was already pushed to its limits on the Xbox 360 and PS3. You could also see it in the framerate - during fast driving, it often dropped to 20-30 FPS. The damage model is a complete step backward, as it's no longer calculated in real-time. Driving in GTA V is far too easy. Sure, many people like it because learning something difficult can be tedious at first, but driving in GTA IV is still a lot more fun for me, even today. There are always new and absurd situations, something that’s missing from GTA V.
