It's not a guarantee that she dies. It's explained in the tapes that it's not just a single trigger but a threshold, as I recall. So there's a chance she may have survived and not activated the parasites but she still didn't want to risk passing it on to other folks if she spoke another word down the line. I'm up to doing mission tasks, and I see why it took so long for someone to get the platinum. It's not that they're hard, but many of them are confusing or troublesome and it'll take a long while to finish them without a guide. Some of them - like listening - are also very situation. Oh yes, there's trailing missions in here Assassin's Creeds fans.
