the Bombs were more than just regular Nukes. I assumed they were what brought magic into the world. However Simon found the crown weeks/months before the war so there's always that.

There was always magic before humans. The mushroom war is what returned the magic to the world. It's been that way since the show's inception, I believe. At least that's what it said on the character test I have from season 2.

As for Jake,

But yeah, Jake's the only one who remembers the whole ordeal because of his wish to have the Lich change his wish to wish Finn and Jake back home. So Finn has no memory of his alternate wish. Also were there moments with Finn's voice mimicked with Simons voice when he was going crazy?

There probably isn't any sort of resistance at this point in time with Simon. Perhaps acceptance. But I do recall the documentary that Simon did with the crown. He didn't seem so crazy with his transformation compared to Finn. Finn was just that; batshit insane. Remember, it was Simon who stopped the bomb so the real Simon was still in control so to speak over the crown.
