While Tekken has a button for each limb -- the usefulness of the skil set of the characters in tekken is at 50%.
Most of the depth in VF comes from sabaki's, counter hit options, movement, option selects, frame traps, the throw system, Open/closed stance, the oki game, and even how blocking works.
Is Tekken technical? Absolutely, more so than Capcom's fighters (my opinion), but Tekken still doesn't come close to VF.
I guess part of your question is even though DoA5 has 2 strike buttons, hows it less technical than VF?
For one, there's no real hit stun property on block to any of the moves in DoA. It can be a quick strike, or a charge-heavy blow, all there's to consider is the recovery of the attack.
Secondly since all moves have no stun properties on block, there's no strategy in stringing a combo specifically to trap a turtle-player.
Thirdly, the sheer amount of move variety depending on recovery of a crouch, to a side, rear, or forward stance for most the characters in VF just overshadows DoA5 in terms of the amount of different moves you can perform.
Competetive players can try an make this a competetive game (and i'm sure it'll be in some tournaments), but my guess is that it won't have much legs once the calander runs.
