There's probably a bunch for Disgaea/Disgaea 2 over at GameFAQs (shameless self-plug). I honestly spent way too much time there on those two games :/

That's why you don't. You're better off doing exactly what you say: Just buy better stuff as they unlock. This changes when you can't unlock better equipment as then the Item World becomes your source of finding (i.e., stealing) better stuff. Additionally, some Specialists/Innocents are super helpful to have early on (i.e., Statisticians for the bonus EXP) but that's a bit beyond "basic gameplay" stuff.
If you never use the Item World, barring the Story requirement, you're not really missing out of anything as far as the main game is concerned.
Why stack everyone in a Tower and take one turn, when you could have everyone take individual turns and kill faster?
Generally, the only purpose for them was to split EXP. They really had no real other purpose (i.e., damage) barring _maybe_ really early on in some weird circumstances but, generally speaking, you're always better served splitting up the attacks and just comboing it to get the damage bonus.
Honestly, I can't really think of a situation where a Tower Attack is the best use of all your characters.
Also worth noting is the use of making a Tower in order to lift someone who hasn't moved from the Base Panel and throwing them clear across the map. A pretty useful thing to get used to doing to make Item World runs painless. Item Worlding is basically how much can you throw (or how much +Movement can you stack).
Why Reincarnate and cripple your character back at Level 1, only to have to babysit them to level them up again?
The system is mostly for post-game stuff. Reincarnating, in short, adjusts your base stats which are used to determine how much you gain per level. Gaining +10 to your base stat doesn't seem like a big deal but 100 levels of it is approximately ~460-ish extra in that stat. Still, this is mainly a post-game related thing and it's more the finishing touches to finalizing a character. The stat gain from a fully reincarnated character is pretty minimal, honestly (something around ~1.2 million, which is a lot lower than the multipliers given for being Level 9999).
This is a bigger deal in D3 since you needed to Reincarnate (or create a new character, I suppose) to go up class tiers to get better Weapon Masteries so you have access to better skills. D1/D2, you can get by not caring as it's just some aptitudes being raised.
Why have that monster combine with that character to make a weapon when you could have both characters attack separately and do more damage?
Magichange wasn't that useful in D3 barring some unique situations to maximize damage output in a single attack ... which isn't that useful for actually playing the game. D4 changes it up a bit with how the system works but I've kept myself in the dark on D4 mechanics so I can't tell you too much on the exacts of it.
