The bare essentials have been discussed plenty but to put the big stuff in focus.
*New Server Architecture designed with a more future proof design. This includes crisper inputs from player, worldless content systems (Think Dungeon Finder and PvP Warzones), and more systems that are considered standard in an MMO (Delivery between players, better world search options etc.).
*Alongside the new server they are scrapping and making two new UI designs for 2.0. One specifically for mouse and keyboard which will behave closer to a standard PC MMO design, and a new gamepad one designed to use more of a gamepads strengths then the current design. On top of this they intend to release the UI script using a form of Flash (At least that was the plan around the 2.0 announcement) to allow players to make their own UI using game information. Want to make a UI more reminiscent previous FF's? You have the tools to do it, want to make something else completely new? Its yours to do. That's the promise anyways, anything with visual elements will be allowed, botting likely won't obviously
*Completely overhauling all non-instanced world zones. Instead of 5 extremely large regions as one seamless zone they are splitting them up into multiple sub region zones with the intention of making new zones more unique and give more character. On top of this they are adding jump to mix and designing the new zones with this fact in mind. The only non-instanced areas not getting a huge overhaul is the cities. Alongside this they will add new areas unable to be accessed before in current (The city of Ishgard, a true beastmen Strongholds, as well as new zones unearthed by Meteor).
*A new graphics engine designed specifically for FFXIV, the current one uses crystal tools which was designed for single player console games and thus highly unoptimized for MMO play. Most notable is no no limit on players visible on the new engine and a proper dynamic lighting system which also casts proper dynamic shadows on geometry and not just NPCs.
*PvP Battlegrounds. Arena type (Players vs Players in coloseum like setting) and a faction vs faction vs faction battleground they are calling Frontlines. Its unknown if these will be ready right when 2.0 comes out.
*Guild and Personal Housing. Guild Estates first followed by personal houses. The houses can be configured and changed both inside and outside with rooms for expansion (Like gardens and a stable for chocobos)
*Chocobo Raising and addition of a new companion system with pets. You can train your chocobo to do a variety of things and it can fight alongside you. Heal, damage, tank whatever you train/raise it for. Yoshida alluded to an idea where you make a fat chocobo and maybe use it as a personal bank. You can have more then one chocobo.
*Eventually new classes and jobs.
Several of these are slated either when 2.0 launches or after it launches. Only the first 4 on my list have been explicitly stated as launching when 2.0 comes out, the others would either be there or at the start or phased in. There will be multiple updates to content with housing, and PvP as 2.0's content roles on.
