I know Crossy Road is clearly "inspired" by Frogger, but that PSM game is clearly "inspired" by Crossy Road and not the original.
Oh, I'm sure. My point was more that it made me sad that more people would likely understand your 'crossy road' reference rather than 'frogger' nowadays. I wasn't finding fault with your comparison itself, I'm sure it's accurate.
As much as I -love- resogun, it'll be the same when people start calling that genre 'like Resogun' rather than 'like Defender', or 'like Buggy Bug McBug' [made up] rather than 'like Centipede'.

Is it because I have to grind money until I have a 5 character party? There's got to be something I'm missing but I have no idea what it is.

Don't give up. You should definitely be doing more than the limited damage you're talking about. I beat the game too long ago to give any strategy, but I don't remember it being particularly difficult. Grabbing the extra characters will certainly help.
Didn't know about the healing staff. Why does the game never mention how important it is?!
How am I supposed to know when to fight a boss? Trial and error?
Generally speaking, bosses in this genre can be beat if you explore everything 100% before getting to them, doing all battles. This doesn't mean you should be able to easily kill them, however -- best case, this will also require proper use of tactics/strategy dependent on game -- for example, proper elemental attacks against weaknesses (x10 for SMT games) or proper use of the demon gazing mechanic in Demon Gaze. If you ever get to the point where you're beating bosses without even trying you probably grinded way too much.
Obviously, not ever game is well balanced but I don't remember struggling with any bosses in DG... maybe the first one before I had a Paladin? But after that, not really. Though there were nice challenges throughout, I just never felt like I needed to grind.
