Disney doesn't include Dolby Vision on their discs (usually). They only put Dolby Vision on their digital copies or Disney+. So when presented with a choice, the iTunes digital copy streams at a higher bitrate than D+ (not by much, D+ is very close) so this is the digital copy streaming on an Apple TV 4K set to Dolby Vision.
The X90J will automatically switch to Dolby Vision mode when it detects it.
Apple TV 4K does seem like the best way to view streaming content from what I've seen, but definitely try a 4K disc because HDR10 discs are going to be better overall quality than DV streaming, even without the dynamic tonemapping, because they have a lot less compression artifacts.
The DV picture mode is still a mode you can change settings on, only some of the settings are greyed out/fixed, default settings will be the best it can look without calibration though so its probably for the best you didnt change it anyway, except you should turn off Smooth Gradation if its on as it doesn't work properly with DV streaming or otherwise, it erases a lot of detail even on low.
