Because the PC needs more shooters? There's no way MS is ever going to let there be a superior version of their flagship shooter on something other than their console. And not only does KI have much less competition in the genre, it is ideal for cross-play since basically all players will be using a controller. KI is the only game I'd want brought over, and I know I'm not the only one.
Super Hexagon! Technically. One Finger Death Punch is one handed as well. Both are pretty intense though. Looking at your list I'd say your best unplayed game that is one handed is World of Goo.

Halo CE co-op on legendary is pretty much the best FPS campaign. I would pay good money to play that with some buddies on PC at 1080/144.

yooo MGO is sooo much fun!! I wish the servers weren't shit though. constant disconnects before even joining a lobby, match ending mid session cause I'm guessing the leader quits, also the infiltrator is cheap as fuck, needs to be nerfed. But even with its flaws its really fun, ended up playing 2 hours straight. Was supposed to read my text book but I lost track of time Can't wait for it to come to PC so you guys can play it too, hopefully the servers aren't worse and konami does something about cheaters.

If you have issues with low FOV don't even think about it. Locked 50ish and there's no way to change it.

Random venting:
Fuck you, Double Fine.
Broken Age managed to somehow glitch out as I tried to finish the last puzzle in the finale and put the game into some sort of softlock state. Combined with autosave, my normal playthrough is now stuck trying to load the final cutscene but failing and loading part of the partial solution cutscenes and it just sits there. I've had to start my speedrun prematurely and this is not a good achievement for this game. I am not a happy camper here.
Eh, for me it's that I don't post a lot and it's mostly when I give something (small) away but then when I wanna enter something I'm not sure if I had enough posts in that or past thread because they run so fast...
