What is Ys like? Never heard of it, although the gameplay trailers on Steam look promising, and I like ARPGs in general. I hear people praising it but what about the game makes it special?

No, it's not. It's fast and actiony, but you bump into enemies for combat. It sounds odd but it works and is fun.
The challenge here and there, bosses, and the music. Ohhhhhhhh how good the music is.
well, first sign of you needing to get Ys is the fact that you claim to like ARPGs yet have never heard of Ys

Origin had great dungeon design. Given that the entire game took place in a dungeon, it was pretty sweet.
Now these I imagine I would need a controller for?

I did, now I have to wait patiently.
Nope.
I attacked a ship that had no interest in fighting and they hammered me and then took off.
I then took a job to deliver some stuff, was boarded at the location and that was game over

It is generally recommended to play those last since they are very old school. I would start with Ys OiF to be honest.
As long as you keep in mind the gameplay difference between I&II and then Origin/Felghana is noticeable!

HOWEVER, to answer your question.
If you can only get one, get Felghana.
If you can get two, get Felghana and Origin.

Origin is bad to choose though, since when he finished it, I guess he wanna see how the story advances. And therefore he would also need Ys1+2
