What's the best way to prepare broccoli for the purpose of retaining nutrients? I read that oversteaming or cooking about any vegetable improperly, too long, etc. can destroy the nutrient content. I like broccoli period, I think that shit is dope and I like it best when it's dry but really hot like how its served at some restaurants.
I just started working out and dieting and vegetables are now a huge part of my diet and I'm just exploring the science behind it all and was actually surprised to see how improper preparation can actually weaken the nutritional content.
I would think steaming is the best way. I don't know how you lose much that way. Even if you "oversteam," where are the nutrients going?

I usually steam but I let it go for like 15-20 minutes. I read that more than 5 minutes in the steamer can begin the process of vaporizing some of the nutrients.

Well, it could help explain their birth rate issues.
Interesting thought, but wouldn't you have to show an increase in soy consumption that matches the declining birthrate to even be able to show a correlation (let alone a causation)? I have no idea if the amount of soy consumed by Japanese people has gone up or down in the last 50 years, but I know they've been eating tofu for a long time at least.
And really, this birthrate talk is just distracting from the real issue, soy's effect on boobs.

Hi Brandon! If you click the WHFoods link(s) in the OP I believe they have some good info on this, but yes, to the best of my knowledge your best bet is to steam the broccoli or blanch it (so not boiling in the traditional sense per se, but a very brief dip in just-boiling water).
