the stem of the broccoli i just as nutritionally dense as the leafy parts. I usually just scrap the edges and the cut it like i would carrots and add it to whatever stir fry im doing. my super cheap broccoli recipe is a rice casserole.

1.5 cups of brown rice
1 cup of water
2.25 cups of milks ( i use almond unsweetened og)
.5 cups of Nutritional flakes (for cheese flavor)
2-3 cups of broccoli florets and stems
1 cup chopped mushrooms
1-2 teaspoons of minced garlic
1 table spoon of minced onion
1 teaspoon of salt
black pepper to taste.

Mix it all up drop it in casserole pan bake covered for 20 minutes then uncovered for 30 minutes at 350

can also add a cashew cheese topping for super cheese flavor

This recipe is for vegans but if you want to use actually milk and cheese it will probably also work out.

I eat fresh broccoli twice a week.

1. Cook it.
2. Enjoy with butter and maybe a little, little dressing.
3. Some slices of thin, thin slices of fine roast beef to go with it.

Mmmmmmmm!

I just want to thank Maxc for reintroducing me to this wonderful veggie. I tend to eat a bowl of salad a day alongside my supper, the salad 90% of the time consists of cucumber, lettuce, onion, and spring onion with a dash of lime and that's my daily veggie intake in a nutshell. I was getting tad tired of eating the same thing everyday, so after bumping to this, I went out and grabbed handful of broccoli and roasted it in the oven alongside my steak. It was utterly scrumptious.

My pleasure! Glad to be of service. It's so good with steak, right? It's awesome!

Why is it not good, do you mean the taste? Personally I don't mind the taste, I thaw frozen veggies(major part almost always broccoli) all the time for my lunch at work. Been doing that ever since I read how many nutrients get destroyed microwaving vegetables. Over 90% of micro-nutrients or something like that.

At home I boil or fry mostly. that kills around 30%, which I can live with.

(I am too lazy to chop up fresh veggies for lunch every day. Also it's cheaper with frozen.)

Oh, yeah, there's no nutritional detriment. I just find the texture really suffers eating a frozen veggie thawed vs. eating a veggie raw. If it doesn't bother you, though, then you get to save money and effort, so it's definitely a win-win for you.

Whenever tempura comes out at a restaurant I'm always hoping it's all broccoli.

Its crisp stalk and soft floret hold up superbly to deep-frying.

My favorite recipe is something I cribbed from Alton Brown, and it goes like this:

1. Take 1 head of broccoli and separate the stalk from the top part.
2. Cut the head into small florets and the stalk into thin, quarter-inch or so, slices.
3. Put the stalk into a small saucepan and add around 1/3 cup of water (and a pinch of Kosher salt).
4. Put the florets on top.
5. Cover and heat on low-medium heat for 5 minutes or so.
6. Open the cover and put in a small amount of butter, then mix.

That's it. You'll end up steaming the florets with the stalk (which get boiled and softened), and the butter adds a light sauce to it.

DO NOT use garlic butter, though. I tried it once, and it tasted pretty bad.

if misery had a taste it would be of steamed or raw broccoli

otherwise, broccoli is great when its tender in something cheesy like pizza or a cheesy omellete

Whenever a game uses "middleware," I expect mediocrity. Just see how poor TLOU looks.
Haha great OP and thread! :D

I love broccoli, it's the only vegetable I can enjoy. As long as it's boiled

unboiled = trash

I love Broccoli.

My favorite recipe is a bit rich, but nice once or twice a year.

Blue Cheese and Broccoli Cannelloni.

Make a normal cheese sauce, but add a small amount of blue cheese, briefly steam the Broccoli (Not too long, you don't want it limp), mix the Broccoli florets in the blue cheese sauce and use it to stuff the cannelloni. Place in an oven dish and cover with a little Mozzarella and bake for 15 mins @ 200 degrees C.

Eat with Garlic bread or a flat bread.

Delicious!

Sounds awesome. I bet it would even be plenty rich and delicious just as a dip, a la spinach-artichoke dip.

I just cooked a homemade stir fry with chicken and broccoli. Also tried homeade fried rice which turned out better than I expected.

Yes! That's what I'm talking about. Good man. Some halved cherry tomatoes would be delicious stir-fried in there, too.

Also did you know that broccoli is the exact opposite of soy in that it helps get rid of excess estrogen? So drop the soys and up the brehccoli, unless you want to sport some DD-size breasts.
1) Soy doesn't cause any of that, it's BS fud that the meat industry would like people to fear about soy to avoid it as a perfectly good alternative to meat and to keep eating meat. The amount of estrogen-like stuff in soy is very small (when talking about the kind of amounts humans can possibly eat per meal without going totally overboard with it) and it's not the same kind of estrogen as human-estrogen, so its effects are not nearly as strong or comparable to injecting those kinds of amounts of human-estrogen into your body. It's been proven that including soy in men's diet actually improved their health in clinical trials, while none of the negative consequences have been witnessed at all (i.e. moob growth, worse semen, less semen or anything of the sort).

I eat about a cup everyday. But I microwave mine for about 2:30 seconds. Steaming takes too long.

You definitely have to get used to the smell though. I used to hate the smell but now I don't notice but my friends complain if I make some with them close by.

Interesting, I never really noticed a smell. Then again, I smell cow dung out my window right now so I guess you get used to any kind of smell.

where are my fellow chicken broccoli alfredo fans?

Oh god, probably one of my favorite dishes. So simple, so good.

Also, I eat this shit raw all the time. Just makes me feel good bah. Steam, dip 'em in soy sauce or some cheese. Don't even trip dawg, it's great, AND nutritious.

Broccoli is my shit.

I don't have any recent of the whole garden but here is one of the mentioned targets before I chopped off its head and had it for dinner ;)

Well done, I grow this stuff for a living (along with cauli, lett and broccolini) and it looks like you do a really good job.

Nothing more satisfying than being self sufficient.

Nice, looks tasty!

I wished I liked it but I don't. The stuff makes me want to gag.

But I have increased my veggie intake a LOT lately with salads.

Try broccoli slaw instead. Tastes totally different and it's delicious in salads.

I was expecting brocolliduty

Missed opportunity no question. That really should've been it.

hey maxc, are you going to serve broccoli at the VermontGAF meet up?

There will be copious amounts of broccoli, that is a guarantee. Esp. if we go to Zen Gardens.

OMG we've got a real-life broccoli farmer here. So, you're paid to make broccoli. Do you still enjoy eating it, or is it like work to you to eat it?

Never really like brocoli in itself, but I'm sure it can become really tasty if you know exactly what you're doing with it.

Lots of great recipes in this thread. Will try some of them!

Steamed broccoli is delicious and so good for you!

Chicken and Broccoli bake is yummy.

Boiled broccoli is okay...but you have to steam it to get the best flavour.

Thanks that means a lot coming from a broccoli professional :)

The one thing I learned from growing it this year was that those cute little innocuous-looking white butterflies and their tiny green worm caterpillars are actually a plague sent from Satan himself. >:-{ (The only saving grace was that they focused on my kohlrabi :( before moving onto the broccoli, so the broccoli damage was minor)

Nice, looks tasty!

It was delicious. We had a little raw with some "secret family recipe" veggie dip and some more roasted with garlic and topped with some parmesan for dinner.

Mmm, looks tasty even when raw! How did ya cook it~?

Roasted to perfection

Cut up broccoli into bite size florets. Mix in a clove or two of minced garlic. Toss it on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast at 425F for ~ 25 minutes. Take it out and toss it with some Tbsp olive oil, Tbsp lemon juice, and a bunch of parmesean cheese.

We steam our brocolli but sometimes we saute it in olive oil with chopped garlic and chilli flakes. Very gooooood!

Lots of great recipes in this thread. Will try some of them!

The French don't always care much for broccoli so I'm not surprised:

Meanwhile, my friend Gabrielle, an American who spent much of her childhood in the South of France from the late 1960s to the mid-’70s, told me that there was no broccoli there when she was growing up. “The French of my generation and those even older than I was had no idea what the word broccoli even meant, so much so that it was on a TV game/quiz show as a question: ‘What is broccoli?’ This made me laugh, because as an American, I knew the answer, of course.”

Gabrielle was eventually told that broccoli had once been very common in France and grew abundantly there. It was, in fact, a main source of food during World War II, but because of this, it became associated with the horrors of the war, and so the French stopped growing it once the war was over, and it was unknown to the subsequent generations.

That's my preferred method for sure. The garlic is even better if you use a garlic press.

Yesss chili flakes are awesome with broccoli! This is a great pizza topping too.

Hmmm, two things that I will definitely have to try!

A garlic press is a great investment. Think of all the time and energy you'll save, and it gets texturally much more spreadable that way. It's great for homemade garlic bread, pizza and stir-fries, too. (Due to a taste bud incident I can no longer eat garlic so I have to vicarious enjoy it through y'all!)
