So, what's considered the best way to mod the system these days? All I want is to be able to play Japanese and US games on the thing, and not have to deal with swap discs.

There aren't a ton, but there are definitely some games worth importing. Ones that come to mind immediately are:

Nintendo Puzzle Collection
Mr. Driller: Drill Land
Battle Stadium D.O.N.
The 4 (I think there were 4) Hudson classic game remakes
There's probably some others I'm forgetting.

For collection purposes, it might also be interesting to try and get a hold of the Metal Gear Special Disc. It an emulated version of Metal Gear NES.

Mario Kart nut here is double dash worth the current ebay prices? I was thinking about buying mario kart 64 another one I never played on its original console the wii virtual console port is butchered I noticed there is not much price difference between the two games double dash is newer with more modern graphics seems like a better value.

So, my only concern with the XenoGC is multi-disc games. I don't want to have any complications when it comes time to swap discs in stuff like Killer 7 and Tales of Symphonia. Are there any issues with that, or is it as seamless as it would be on a normal Cube?
Seamless. You're getting mixed up with multi-game discs (as opposed to multi-disc games). And as far as I recall the original Xeno GC had issues with multi-game discs but that's no longer the case with 2.0.

Absolutely jealous on your gamecube chainsaw controller. Still need that , among other things, to add to my collection. Nice collection btw; seems you got most of the 1st party PAL releases.
Argh... I have two wavebirds. The two receivers sat in my Gamecube and had not budged since 2003.
Just last year I moved and I have to accept that I lost one of the receivers. Hopefully they are not as rare as the wavebirds themselves...
I had to get me a super expensive converted RGB to SCART adaptor for the PAL territory I'm in. Loved every minute of it, and is now signed by Mr. Miyamoto himself! It's a console I will always keep because of that.

Huh, what advantages does this give? You need an input that accepts 480p from scart to make this worth it, surely?
I'm not actually sure but all I know is that it's the best video quality that is possible with my GameCube in a PAL territory at the time. I'd Google it to explain but I'll leave that to you lol.
Rich! is correct in his statement that RGB theoretically has superieur colours vs Component.
The benefit of component is that it can go much higher resolution wise though. They are extremely similar in sharpness at 480i to the point that the differecnce is negligible. I have even read that RGB scart is capable of 480p, but I have never seen it irl. I might also add that these formats support things, the gamecube may not support that. (gamecube does not 720p+ which component is capable of and it does not do RGB colourspace through RGB either, for example)
If you own a CRT which cannot do 480p progressive-scan, I'd say you shouldn't bother with expensive component cables and just go with RGB scart 480i.
If you own a progressive-scan-capable CRT, you might consider it. 480p will definitely appear sharper, but CRT's handle 480i much better in motion (less smearing/artifacts etc.) than HDTV's so the difference between 480i/480p will not be as big on a CRT as it is on an HDTV.
However, if you own an HDTV, the difference bewteen 480i component/RGB vs 480p component is extremely noticeable, certainly in moving video (such as games...) and component cables where worth it for me 5 years ago when they where still 60$. Now with 200$...ouch, I honestly don't know. It depends on your commitment with superieur video quality and how much you plan to play your cube, among other factors.
Now, this is where it gets funny. That whole RGB colours are better than component debate does not hold true with the gamecube. Now, I''l quote a very knowledgeable person (5th post on that page) from another site if that is OK:

There, even though its an RGB signal, on gamecube (through its analog or digital port) the colours are just YUV colourspace nonetheless. Also, if I remember correctly, gamecube renders in 24 bit colours, as opposed to full 32 bit.

The GC's GPU renders to the EFB (embedded framebuffer) in RGB. But after each frame, the EFB is copied to the "XFB" (external framebuffer) in main memory, and converted to YUY2 on the fly. Here's a brief description.
So, it's true. Internally, the GC uses RGB, but for the output buffer, it uses YUY2.
No that's just internal. It's not really 're-encoding' to RGB, YUV is really just a compressed RGB signal. Your TV ultimately displays in RGB, it's where colour information begins and ends.Welp... If not then it would be so damn funny and lame if it re-encoded YUV to RGB. Haha!
