Some more information from people who are now returning from Celebration III. Most reports didn't get the full information.
The animated series will be thirty-minutes and a continuation of Clone Wars and air on the Cartoon Network. Lucas said "3D animation", but most people think he means the same sort of 3D animation that was used in Clone Wars for the space battles, etc.
The live action series is planned for 100 one-hour episodes according to McCallum, which is about five seasons. It will be set between Episodes III and IV and focus on spin-off characters. Speculation points to Bail Organa, Boba Fett, or the new fan favorite Jedi Aayla Secura as being possible characters in the series. Amy Allen, who plays Aayla Secura, said that she and Lucas had briefly discussed a role for her in the series.
It will be structured like Young Indy and produced in the same way where an entire season is written and filmed at once. Lucas will kick off the series by doing the first season and then hand the show over to full time show runners. They are about two years out from the series beginning.
Mark Hamill has been rumored to be involved with the series, and if they are structuring it like Young Indy it's possible that old Luke could make appearances in the introductions to some episodes.
After the five year run of the live-action series, Lucasfilm is open to doing other series set in other times of the Star Wars universe such as a KOTOR-era series.
