I spoke with the Corsair dude at PAX for at least an hour, and he did say that in terms of mice with good sensors (read: optical), that there is something in the pipeline that should be announced at the end of this month.
I basically begged him to take the M45 sensor and put it in the M65 body. He agreed, that is what should be done.
He did come out and candidly say that the reason they can't do this is that most consumers buy mice based on the DPI # on the box. Putting the much more accurate and precise optical sensor in there limits that big DPI # in bold font.
But in terms of what is available now, you'd be looking at the Logi G402 (out in a few weeks), Steelseries Rival, Corsair M45, or CM Storm Spawn. Pick the one that best fits your grip type.
Rival = palm, M45 = hybrid, Spawn = claw. G402 is a weird one that seems to work best with small hands. I tried it for awhile at PAX and loved it, and I typically avoid Logi stuff.
For the keyboards, it doesn't matter at all. If you don't need the tenkey, I'd advise a Vortex Race:
