Having opportunities set to minimum is probably the best bet when starting out. You can at least learn of an opportunity and know the steps necessary, but not specifically where each step is, and you can just select "stop tracking" in the opportunity list if you don't want the hints. It also lets you know when a certain opportunity is past/lost, and it hints how that happened.
Opportunities off is pretty good too, but mostly once you're familiar with how the game works.
