The thing with Dreamcatchers is that they are from a specific tribe. So like even if she IS Native American, it is still kinda weird to have that is she isn't specfically from that nation.

Yeah, one percent of people have celiac disease. Gluten doesn't harm 99% of people and avoiding it without replacing all the other nutrients that gluten-foods generally have is unhealthy and narcissistic.
And for what it's worth I wouldn't have made the joke had I known it was actually 1/4th.

my mother seems to think gluten "sensitivity" is a thing (apart from celiac disease) I'm not quite sure if that's true or not though

Uh, you were literally just judging celtic tattoos for not having any meaning.
I don't like celtic tattoos because they look bad and they seem to be too common, but if someone got one I wouldn't make fun of it. I'd just quietly think it's not a great tattoo.
Meanwhile, I don't know if dreamcatchers have any significance to the native americans in her family. I haven't asked, I haven't met them. I also haven't seen a lot of dreamcatcher tattoos. I didn't know they were ubiquitous.

I wanna say there's no such thing as gluten sensitivity but I have issues with it. Dr "diagnosed" me as a coeliac in 2010 but I don't trust it. I can eat gluten stuff and be fine majority of the time but then I'll have an occasional incident where I react to it. Tried to narrow the things down to maybe a sauce or a veggie but no, it's always the wheat in certain foods :/
Refuse to call myself a coeliac though. Don't wanna get lumped in with those crazies.

I have a deeply unpleasant 36 hour intestinal reaction to some kinds of beer. Haven't figured it out. It is quantity related, in that I can generally have 300mL of any beer and not regret it, but any more of the bad ones and I'm fucked.

Look into the ones that set you off and see if there is something in common in them that the others are lacking? Basic advice I know, and unlikely to be something on the label. But since hops is used to treat intestinal disorders maybe it's a specific type of yeast?

Yeah, the ingredient lists aren't particularly helpful e.g. "spring water, malted barley, hops, and yeast", oh boy.
A couple of the ones I can safely over-indulge in do list more specifics on their website, so that's a start. Mostly I just stick to the usual 4-5 (this is not a new thing have been so afflicted for a decade now).

When I was in Singapore (I want to say around 1990) for a holiday I almost spent all of the cash I'd saved the past year to buy a PC Engine and Splatterhouse.
