I'd argue that its "core" gameplay is still intact, because regardless of whether it's ATB or turn-based, it's still heavily an RPG. You just have to be more attentive now and won't be standing in one place.
And Resident Evil didn't come out two decades after the original. But if it did, I would have argued that the way in which a remake is shaped is up to the developer and doesn't necessarily have to keep its combat exactly the same. Given the quality of what we've seen so far, if you're really a fan of FFVII, then you'd appreciate what they're doing.

This is being made with Unreal Engine. PC release will come much sooner than that.I'm expecting 2017 PS4 release then PC in 2019/2020.
They're more than remasters, but keep intact the story and gameplay. Their biggest changes are in graphics, the biggest hurdle most people have when "going back" to older titles.

... In all seriousness, you know what sacrilegious things I've done with remakes? I've played Resident Evil Remake... without tank controls. I've played Final Fantasy IV DS... with auto-battle turned on. I've played GTA V... in first person mode. I've played Goldeneye... without Pierce Brosnan. I've played Metroid Prime... without C-stick controls. I've played Tomb Raider... with QTE's added. I've played Metroid: Zero Mission... with a map to guide me.
The game still looks like a menu-based JRPG to me. Just not turn-based. Even the original Final Fantasy games evolved from straight up to turned-based to ACTIVE turn-base for many installments.
I'm open-minded enough to give it a shot.
