To me it's more satisfying the idea that they were separate people and Hannah killed Simon because there's a lot more weight to the whole fairy tale story. Hannah was worried Eve was stealing everything from her as an outsider; her parents, her husband, her identity.
The multiple personalities thing is a little less appealing to me because it basically says Hannah went more mental than usual one day and killed Simon. There's kind of no inciting event for the murder.
Of course, the "she's making it up" theory is also possible, but then it sort of becomes like The Usual Suspects and there's no point analysing much of it since it's all lies.
