I was given a free smoker and a grill

My gf's brother was too lazy to move this so he let me have them, I have never had a smoker. It looks like it hasn't been opened or used in years but I powered it on and it works or seems to. The smoker is a Masterbuilt Electric Smokehouse and the grill is a Chargriller that has a gas grill and charcoal grill in one, any tips on a first time smoker user?

The key to grilling is consistent temperatures. That means Grill, Ambient and Meat. Pay attention to grill temps and adjust for ambient shifts with seasonal changes. Put your meat out and let it get to room temperature.

Do that and the basics are easily repeatable to superlative level.

For smoking, I would recommend doing some pork ribs first. They are a basic half day smoke at a low temp. Youtube as dozens of great examples/recipes.

Close the lid/door of the smoker and let it work.

Also, I don't see them talked about a lot but smoked beef short ribs are delicious and easy to prepare. The perfect thing to cook when you feel like brisket but don't want to cook a whole brisket.

Basically:

Make a rub of 1/3 each: Salt, Pepper, Garlic Powder and rub it liberally on the short ribs (bone-in or boneless, doesn't matter).

Smoke at 250 degrees for 4 hours.

Remove short ribs, place in an aluminum pan and pour in about an inch of beef stock. Cover loosely with foil and put it back in the smoker for another 3.5 - 4 hours.

Absolutely delicious.

I've never used an electric smoker but I love my Weber charcoal smoker. It gives you an excuse to sit outside on a nice day and read/play a handheld for hours because you have to "watch the fire."

Ignore the goofball below. Electric smokers are for pussies. They don’t give out as good of smoke flavor and therefore won’t taste as good. Anyone who says otherwise doesn’t have the experience of managing heat.

Learning that will serve you well in other aspects of cooking, and tending to a smoker is part of the fun. Decent smokers will also hold their temperatures steady once you know what you’re doing.

electric smokers are the crockpots of outdoor cooking.

I smoke on a komado joe so I don’t use an electric smoker. But I recommend looking up your smoker online and watching some videos.
Get some seasonings. Season that meat. Start with something easy like a chucked or ribs. Get a good meat thermometer. And enjoy all the food.

for grilling, gas is instant, charcoal taste better. I think burgers and steaks taste much better with charcoal fires.

Last fall I bought an Akorn kamado style off Facebook for 60 but haven't tried it yet, I'll try it soon and see how unlike it with this free grill and get rid of one of them

Don't look a gift horse in the mouth. Try it out and if you like it, you can branch out with charcoal. If you have no experience with outdoor cooking it makes sense to dip your toe in the water first.
