A random observation from my own play and spectating: nobody ever lets go of the stick to drift. It's always in or out, never coasting.

Wonder why. Is it just a "I have to give input" thing, or is it for extra safety in pulling further out/turning closer in?

People still accustomed to MK64 style drifting to get the boost most likely. You had to go in and out 3 times to get the boost.
