You should always have elements in mind -- a good dragon or lightning weapon will make a huge difference in a fight like that. I guess the game is paced differently, the expansion will probably bring a whole new level of hurt. Plus I suspect that these balance changes only apply to the village, the gathering hall won't be lenient at all!
Loved Gigginox though, a superior version of Khezu! The sand monster (Happu) was also a ton of fun. The rest were....unremarkable. (Just started the 5 star village quests)

MHP3 is def. easier than MH3 so far. But I'm sure they're saving the pain for MHP3G.

It may be somewhat easier, but apart from a couple of big damage moves (Naruga's tail slam), there haven't been many monster nerfs. You can still get your ass handed to you if you waltz into a GH quest with a bad equipment choice.
Honestly, I think people who reckon this is "too easy" are just more used to the system/monsters/weapons this time around. Monster Hunter is only really as hard as you make it: if you rush and are careless, you usually end up using a ton of recovery items, and if you rush and are careless with those, you end up on the Felyne cart.
I always expect to get beaten by a new monster, especially on the first encounter. But if I'm patient and treat the new beast with respect, I find it easier to cope - doesn't necessarily mean the game is easier on the whole.
