I'm just surprised Saori is taller than me! She's apparently 5'10". Usually, anime girls are drawn as tall but are pretty short. Saori is pretty tall in that regard.
And she's only 15 so she could actually grow more!

I'm pretty sure it's all of them (so 6 - 12), but in order to do that, they'd have to more or less double the pace that the first episode had. It only covered about a quarter of volume 6. It's a bit worrisome, but they did mix up the order of events, so they might just cut things to make it work.
They've said they'll be covering all the remaining volumes.
She does, they mention it in the start of the book and game, but I don't recall them saying it in the show.

I agree that I don't see the fandom over her, but at the least you can say that she seems like a genuinely nice person.
This season should have the revelations you need.

I am not naturally drawn to the "nicest" girl of a bunch all the time, but I would use "down-to-Earth" (crazy otaku-ism aside a bit) to describe Saori before Miss Super Nice (which better describes Manami). Saori is very teasing and talkative, I'm never bored with her on-screen despite her not being "bitchy" or aggressive.

The show has little to no pandering compared to the manga. The manga is pretty much what average people think the show is.
Although it did give us dog Manami, and that's best Manami.
